My Mom's Pot Roast

Okay, have you ever wondered why I blog so much???? I know I've said it before, that it's my reprieve....but really, it's my daily journal.  One that I'm letting you peak inside....if you like!  Also, I want my kids and grand kids to have a daily account of my life (and theirs) and remember how to do things long after I'm gone.  I'm not goin anywhere soon, I'm just sayin.  I want a record of ME.  Is that bad? Is that selfish?  Maybe so, but I just want them to know a few things... like recipes passed down to me from my mom.  Oh this one is SO yummy!  Actually I have a couple of them here.

Start with a 4 lb chuck roast.  Pat it down with garlic salt, sea salt, and pepper.  Then coat all over with flour
 saute a little garlic in some olive oil
 then brown the meat on both sides
 salivating yet????
 pour water just to the top.  Then quarter two peeled white onions and add
 let it boil.  I bring it to a boil and then let it simmer all day long.  Well maybe 4 hours or so.
While cooking, your grown child WILL dip out a cup of the broth and drink it.  That's okay.
Add a bag of cut carrots or use those little baby ones about an hour before serving.

Tip.....I added too much water so I had to thicken mine using this:

Now on to Garlic Smashed Red Potatoes.  (My kid's fave)
Start with boiling a bag of red potatoes
Drain in a colander
Take two sticks of REAL butter and about 8 cloves of smashed garlic and melt together
Salivating again????
Then add the potatoes and smash with a potato masher.  Add a little whole milk or half and half with this.  I also like a little horseradish, but my kids don't
Now....finally the REALLY yummy part.  You will want to make this for your kids for Thanksgiving.
I promise.  It's both easy and oh SO delicious
Here's the recipe:
Start with this:
 Beat two eggs well
Mix the sugar and flour together
 Melt a stick of butter in the microwave and add
TIP:  I melt my butter in the wrapping (as long as it's paper wrapping)  This prevents splattering
 Now add the egg mixture.  (make sure the butter has cooled)
 Mix it all up really well! oh, add 1 tsp. vanilla
 Add a cup of milk chocolate chips
 Into an unbaked pie shell.  Bake 30 - 35 min. on 350.  Check it, that might not be long enough depending on your oven
 Eat warm with vanilla ice cream
 Enjoy your day y'all!

  2. Kim is insisting that she get some kind of dressing that she swears by. I'm insisting that I make her dressing. We're having a standoff on this one. We usually just open a can of cranberry and slice!

  3. All I can say is "Mmmmmmmmm" and I'll be cooking this stuff as soon as I have enough room in my stomach after Thanksgiving and an Iron Bowl party.
