I'm not a fan of breakfast.
at all.
As a matter of fact I have been known to eat lunch for breakfast many times.
I honestly just don't get in to breakfast foods!
(unless it's a French croissant slathered with french butter)
then I'm a HUGE fan.....
but it has to be an authentic French croissant.
toasted.
Anyway, what I do like is quiche.
So, I came up with an easy remedy to fit my taste buds because we all know that breakfast IS the most important meal of the day.
Is that the truth? Or is that just what "they" say.
I do know that when I eat blueberries, my brain power goes from 0 to 100 for the day.
And I'm serious.
Okay, here we go with my...
Mini Crust less Quiche
Start with this:
6 eggs, green onion, a little deli turkey, chopped oregano, and a little Tabasco.
The pico de gallo is to add on top
Set the oven at 325 degrees
crack the eggs. Now, if you really wanna be healthy, use egg whites.
whisk the eggs, cut up the green onions and add
finely chop up the oregano and add to the mixture
and the turkey
add a splash of this
and mix
spoon about this much into a muffin tin
Bake for 18 - 20 minutes at 325.
Add a little pico de gallo and you've got a great breakfast!
(and you can freeze the other five!)
Update on my Advocare 24 day challenge!!!
It was SO easy for the first day!
I was really surprised and honestly think I will be able to stick with this very easily!
Hardest part was about 4 yesterday when I got pretty hungry.
But, a small handful of nuts and an orange got me through it!!
2 days, no wine
90 0z of water yesterday.
No exercise yet, but that will come next week!

ReplyDeleteI LOVE LOVE LOVE Advocare products! The challenge I did back in October helped me kick coffee - which is INSANE because I LOVE coffee!! But Spark and Catalyst are my two favorite things of all time! I signed up to be a distributor just because I loved the products so much and wanted the discount - ha! Proud of you, Mrs. Boggs!! The challenge is tough, but OH SO WORTH IT! :)
