So. I've been on a little cooking spree lately!
I LOVE scallops. Probably my favorite seafood dish.
This week I came up with my own little concoction for yummy scallops!
So. Here we go!
First you obviously need some big ole plump scallops.
and some Italian style bread crumbs
salt and pepper and garlic your scallops
then coat them with bread crumbs
chop up some green onions
melt some butter in your skillet
saute the onions slightly
add the scallops one at a time
while they are cooking, add a little red pepper
Brown each scallop for about 2 minutes on each side
then add a little white wine and lemon juice and cook for an additional 2 - 3 minutes.
Serve over tuffle oil drizzled rice!

Here's what cha need!
Kalamata olives, yellow baby tomatoes, cucumber, avocado, and cilantro

how to cut baby tomatoes:
but then you're left with washing two extra plates.....
chop it all up!
I added this wonderful sea salt with rosemary
and a little balsalmic vinegar and olive oil
mix it all up and you've got a terrific addition to any meal!!!
