Jordan's Chicken Taquitos with Creamy Cilantro Sauce
omg.
Really it is the best thing I've ever had in my life.
For Christmas, Jordan and Eric gave all of us a wonderful cookbook comprised of recipes from everyone in our family!
I treasure this cookbook.
So, tonight I tried out one of her favorite recipes.
ya'll...you've got to try it.
So, you start with making the sauce because it needs to sit for a while in the fridge.
Creamy cilantro sauce.
you dump all of the ingredients in a blender
then blend it to death
then following the directions, you chop the cilantro and green onions
after stealing some of the rotisserie chicken, you shred about 2 cups
and mix it all up pretty well
using small corn tortillas
and lining a baking dish.
you dab some of the mixture on the bottom of the tortilla
then roll it up and place seam side upside down
bake at 425 for 30 min.
Sprinkle with sea salt
using "designer" paper plates, pour the sauce on evenly...
oh yum.
Trust me on this one,,,it's a must try!
