Now let me tell ya folks, this is one good lookin dish. I'm serious. DO NOT let this puppy get by you. period.
Here's what cha need:

cook up the chicken and shred it. Or, buy a rotisserie chicken at the market.
Then dump all of it in a bowl with a little lime juice
Don't forget the cilantro!
and the cheese
Mix it all up together
Add the shredded chicken
Preheat the oven to 425. Add the mixture in either a flour tortilla or the corn kind
Place on an aluminum foil lined pan sprayed with Pam
Roll em up real tight with the closings on the bottom
Now, spray each with either cooking spray or a mister
and sprinkle on some sea salt
Cook for 15 minutes. Check it out,,,,I burned the edges. Check on yours.
Remember that green dressing we made the other day? 2 blogs ago? Well here's your chance to use it!
Pour it all over and eat it all up....Then lick the plate.

Baked Creamy Chicken Taquitos
2 C. shredded cooked chicken
1 package of small corn or flour tortillas
1 C. pepper jack cheese
3 oz. cream cheese
1/4 C. green salsa
1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp. onion powder
1/4 tsp. garlic powder
3 chopped green onions (optional)
1 T fresh squeezed lime juice
3 T. chopped fresh cilantro
Soften the cream cheese for 20 seconds in the micro. Mix all of the ingredients except the chicken, cheese and (of course tortillas). Then mix in the pepper jack cheese and chicken.
On an aluminum foil lined baking dish sprayed with Pam or a mister, take a round tortilla and spoon the mixture to within 1 1/2" of the tortilla down the center. Roll tightly and make sure the closure is at the bottom. Next, mist the tortillas with a mister or baking spray and sprinkle sea salt.
Bake at 425 for 15 minutes being careful not to burn the edges.
****tips:
I used large tortillas (small ones work better)
1 used flour tortillas and I think I would like the corn ones better.
Let me just tell you how good that green dressing stuff is on these. Try it tonight. Your family WILL love you forever and your spouse WILL forgive you for cheating!
