Watercolor, Tennis, and A Solo Show

I'm down at the beach. The beach being Watercolor. I'm doing the design work on a house down here and we are on the verge of being finished so I came on down to check it out!!!! This is the sunrise I awoke to this morning! WOW

And here are some pics of the house.....




......I'm also here playing tennis with some fun Mississippi chickies!
......and getting a few lessons from these gurls.

I have to mention my SOLO SHOW though. (did that rhyme???) Anyway. While I'm down here doing this.....I should be home painting. I will be doing a SOLO SHOW in Jackson, Mississippi, Friday, March 12th at the The South Warehouse from 5 - 8 p.m.

So....like I said....I should be home painting...but no, I'd rather play. I will have 30 pieces on display to ponder and purchase that night and then they will be displaying my paintings for purchase for a period of time. The show is open to the public and beer and wine will be served. To say I'm honored to be asked to do my first solo show here is an understatement. This place is AWESOME!!! Anyone in the Jackson area, please come by and say hello!!!

My Chicken and Rice Soup

As promised I made My Chicken and Rice Soup tonight!!! OH yummerlicious. And oh so soothing to those of you a little under the weather. So this is especially for my friend Elizabeth. I wish I could bring you a bowl!! Even if you're not under the weather, it's one of those comfort foods that my fam can't live without! Here's how it goes.....and here's a picture of Elizabeth!

Boil a whole chicken (about 1 1/2 hours). DO NOT take the skin off. This is what makes it GOOOOOOD!


After it's good-n-dun, de-bone the chicken. (now you can take the skin off)
don't shred the chicken, that makes for a cloudy soup
*****Note....be sure to leave the fat IN the broth. This is what makes the soup good. I know, I know you health nuts out there....but seriously you can handle it for one day!


add about a tablespoon of thyme and salt and pepper to taste


Then add a small bag of carrots, you know those kind that are in the pre-cut veggi isle.

Let that boil until those carrots are tender.

Then add about 1/2 of a small bag of rice.
you may need to add a little water right now and a little more salt and pepper

Let it boil until the rice is done.
about half way through throw that chicken back in
Like I said "yummerlicious"!

I'm cookin Chicken and Rice soup tonight. My secret recipe. (with a secret ingredient) sure to please what ever ails you. Hint,,,,,,if you're at the market, whole chicken, whole grain rice, carrots and thyme. I'll post it a bit later. This is one of my kid's favorites and great for when you're a little under the weather like my friend Elizabeth. This post is in honor of Elizabeth....Hope you feel better soon my dear!

For a little "Paradise" with Mr. W. (who turns into Mr. Grouchy (Mr. G) when we fly) I'll keep you posted! Okay, we got upgraded (thank goodness, now he's back to Mr. W.) update: Delta lost Mr. "G"s luggage. Now tell me this. How the heck do you lose luggage on a one way flight? He got it last night at 11:00. Boy was he MAD!!!!

And this is what I'm buying when I win at black jack.....oh be still my Valentino lovin heart. update....which I lost at last night......I'm thinkin those Valentino stacks may not see my feet.....NO I'm going to have positive vibes!!!

I'm lusting over these too.....think I'll have to move to the craps table tonight....

then a nice lady snapped our pic. We are such the tourists!!! (only thing missing is the tall white socks and a polaroid around my neck...I am however sporting a fake tan (shuuuuuu don't tell!)

ummmmm Okay, today is Monday and it's pouring outside. yuckkkyyyyy. We're catching an early flight out to go endure worse weather back in Georgia. Smart huh? (side bar.....won't be getting the Valentinos OR the Louboutins...or any other shoes anytime soon. The casino made sure those shoes were not for me!)

I'm gettin this THIS YEAR

Okay, being from Dothan, Alabama, I LOVE RED TOMATOES. I love them so much that I've been known to eat about 3 a day. AND I've heard that this little contraption grows the BEST tomatoes EVER.
The problem is..... It's UGLY!. I don't want to put my neighbors (or myself) through the heartache of looking at this all day. What to do, what to do?.....I have an idea and as soon as I accomplish my project, I'll post it. In the meantime chickies, let's hope for warmer weather so I can use my Topsy Turvey! I am SO over winter!!! Stay tuned!

Cindy's "Shortcut Lasagna" (oh yummy)

I've never made lasagna in my life (well maybe once) I usually buy the frozen kind at Costco. (um, sidebar, favorite store)
But.....Cindy and Sykes rode home with us to catch a flight outta Atanta this morning and she decided to teach me this EASY, BREEZY recipe. The sauce reminds me a bit of my spaghetti but you don't have to cook it nearly as long.
Here's how it goes!
First to get those taste buds goin....the finished product
oh yum.
next the ingredients!

Brown the ground beef and throw in a can of V-8

Then the McCormicks spaghetti mix

and a large can of crushed tomatoes

add another bag of McCormicks spaghetti mix and 2 [small] cans of tomato sauce

oh yum. Let simmer for 10 min.

line the pan with the UNCOOKED lasagne noodles

sprinkle with parmesan cheese

spread the sauce on top of the noodles


another round of parm cheese

a round of mozzarella cheese

then the cottage cheese

another round of uncooked lasagna

then the meat sauce again (gettin hungry yet) oh la la

finish it off with another round of mozzarella and parmesan

and......the rest of the meat sauce

Bake at 350 for 30 min. covered
and a simple lil salad (Mr. W. who never eats salad gobbled this up!)

There ya have it!!!! Cindy's Shortcut Lasagna
*****this freezes beautifully but let thaw completely

Ingredients:
Meat sauce:
1 lb. ground beef
2 pkg. McCormicks dried spaghetti mix
1 12 oz can of V-8
2 small cans of tomato sauce
1 large can of crushed tomatoes
Cheeses:
Parmesan cheese
Large carton of Cottage cheese
3 - 4 cups mozzarella
More cheese (you can add if you like)

PS......Cindy says people have wanted this recipe for years (it is really that good!)
