Well, lets see. I've stayed in a hospital room for most of this week, endured watching my mom in excruciating pain, and then came home to our sweet dog that died in our driveway.

Comfort food to the rescue.
I felt like cookin and I want to share these easy breezy recipes with you, my faithful readers.
By the way, is it hard to comment on my blog? I keep getting face book messages that they can't comment!
I'm getting like 200 readers a day so that makes me feel good, I am just wondering? Please let me know (if you're able to comment) so I can change something that's making it hard. Before I start, let me thank you from the bottom of my heart for all the sweet messages I have gotten about my mom and Moby. You guys have sustained me. I'm serious. and....I know I've been blogging a lot. It's sorta my reprieve!
Here we go.
I made....Santa Fe Soup and some Apple Pie Concoction.
Let me tell you, if you wanna make your spouse happy.....make these.....TODAY...and sit back on this cool fall day, and watch some football....um,,,ROLL TIDE BEAT "THE BEARS"...wait....while I'm on that...THE BEARS??? Come on Ole Miss, you coulda done better than that. I liked "Landsharks" fits perfectly don't cha think?
OK now that that's outta the way.
First we'll look at the Santa Fe Soup
Brown 2 lbs. of ground beef
this is what cha need (don't mind the paper towels...oops)
add 2 pkgs. of Ranch dressing and 2 pkgs. of taco seasoning to the browned meat
Then just throw in the rest!
It'll look like this.
then serve it up with this,,,sour cream, cheddar, and chopped onions.
add a little avocado which I didn't have and really chopped red onion is better. Then enjoy!
Now for the OMG best thing you've EVER put in your mouth....
Seriously folks, I thought I'd died and gone to heaven.
I don't even have a name suitable for this it's so good, so I'll call it
Yummy Apple Pie Concoction
This is what you need:
First, Peel and core two granny smith apples. Then slice them into 8 slices.
Take your crescent rolls and starting with the point, wrap one around each slice. Pinch it together at the ends when finished. I bet you could make yours look a little better than mine....
Now, melt 2 sticks of butter
Add 1 1/2 cup of sugar with 1 tsp. cinnamon
and stir it all up...salivating yet????
Pour that mixture over the entire dish
Now for the amazing part. Who thought of this I don't know but it's brilliant!
Pour 1 1/2 cups or a 12 oz. can of MTN. DEW over the entire dish
Bake for 35 - 45 min. in a preheated 350 degree oven
and just die and go to heaven with this....

ReplyDeleteyummy!! I make the same Santa Fe Soup, but we've always added the mixes to the soup, not the meat...but I bet that is better, so I'll be sure to try it that way!! I also use the Morningstar Farm Crumbles too, it is soooo easy to just pour that in! And I add cilantro, b/c it's like catnip for me!
Hope things will go better--remember, tomorrow is another day.

ReplyDeleteKendall...how ironic is this. SITTING on the counter are ALL the ingredients for "taco soup" is what I call it:) I PLANNED to make it yesterday and didn't so it's ready for today. AND..I had gathered some recipes to write up for a recipe book a friend of mine did for Jessica (everyone sent in recipes...of course mom (me) is behind!!) and one of the recipes is the "apple pie dumplings" (my name for it). I just looked at it this morning. All this and NOW reading your blog. Ironic!! I don't have any problem commenting BUT on yours and some others I have to select the profile TWICE for it to give me that scrambled word. It's not anything you need to change I don't think, because I've had it happen on other blogs.
ReplyDeletekendall - the apples look fabo ! but i have a question - you said cut the TWO apples into EIGHT slices - but your dish has 16 .... ??? does that mean if i only have 8 slices that there will be way too much sauce? im confused
